Chicken with Peppers

The chicken with peppers is a rustic and tasty main dish, you will have moist and creamy chicken with a perfect blend of peppers and all their sweetness. An easy dish to prepare, I chose to use thighs and drumsticks because they have more meat and they are not as dry as the breast, this is a free-range chicken from a Puglian farm, but you can use the pieces you prefer, even for the peppers, choose the ones you like….As a variation to the classic Roman recipe, I added olives, which don’t go amiss at all; rather, if you like them, I recommend them. So now, you just have to try!!

Ingredients

  • 2 chicken thighs
  • 2 chicken drumsticks
  • 2 peppers
  • 1 clove garlic
  • 0.85 cup tomato puree
  • oil
  • 1 tsp vegetable stock cube
  • chili pepper
  • Half glass white wine
  • olives to taste

Steps

  • Start by washing and cutting the peppers into not too small pieces.

  • In the pan, add enough oil to cover the bottom and the garlic clove, turn the heat to moderate and sauté for a few minutes.

  • Then add the chicken and chili pepper.
    Over moderate heat, brown it well on both sides for about 10 minutes, then raise the heat and deglaze with wine.

  • After about two minutes, lower the heat and add the peppers, tomato puree, stock cube, olives, and a bit of salt.

  • Cover and cook for about 30 minutes, turning the chicken halfway through cooking and adding a bit of water if needed (mine was quite soft, so I didn’t add any). At the end of cooking, taste and adjust salt if necessary.

  • Your chicken with peppers is ready!!

Storage

You can store the chicken with peppers for up to 2 days.

Variation

If you don’t like garlic, you can replace it with onion, or if you prefer, you can make the same recipe with turkey drumsticks.
