Couscous is a traditional Moroccan dish, but it is also known in other parts of the world. It consists of small granules of semolina that are steamed. Couscous is a very easy and quick one-dish meal to prepare, especially convenient in the summer to take to the beach, a light and complete meal. There are different variations to prepare it and according to your tastes, it can be with meat, fish, or mixed. In this recipe, I prepared couscous with chicken breast and some types of vegetables. Let’s see how!

Ingredients
- 10.5 oz couscous
- 2 zucchini
- 2 yellow/red bell peppers
- 1 onion
- 2 carrots
- 1.1 lbs chicken breast
- 4.2 cups about of vegetable broth or bouillon
- 1 packet saffron
- oil
- flour as needed to coat the chicken
- chili pepper

Steps
First, prepare some vegetable broth or bouillon. Cut the chicken breast into pieces (I prefer free-range), then wash and chop the vegetables.
Flour the chicken breast and set it aside. In the pan, add a bit of oil and the onion and sauté over low heat.
When it starts to fry, add the chicken breast, removing excess flour, then take a glass of broth, dissolve the saffron in it, and pour it into the pan.
Add the vegetables and a ladle of broth, cover, and start cooking over moderate heat, stirring occasionally and adding a bit more broth if needed. It should not be dry, and the vegetables should be slightly “crunchy.”
In a container, prepare the couscous and pour in the broth, double the amount of the couscous, cover, and let it “swell”. You’ll know it’s ready when it absorbs all the liquid. At this point, you need to fluff the couscous with the tines of a fork.
Then pour all the sauce over it, mix well, and the couscous is ready!!

Storage
The cooked and seasoned couscous can be stored covered in the refrigerator for 2/3 days.
Variations
You can also season the couscous with other types of vegetables like green beans, eggplants, cherry tomatoes, etc.
Tip
If you don’t like or don’t have couscous, try the same seasoning with rice (cooked normally and then seasoned), it’s excellent.
