Curly Puff Pastries with Cream

The curly puff pastries with cream are a delight for the palate, crispy on the outside and with a soft cream inside. They are a treat that reminds one of the Neapolitan curly sfogliatella, but they are two very different things. Ingredients

  • 2 230 g rolls of puff pastry (rectangular)
  • 0.7 oz lard or butter
  • Lemon custard

Steps

First, prepare the cream you prefer and let it cool.

  • Take the first roll of puff pastry, open it and cut it in two. Melt the lard or butter, take a rectangle and brush it all over.

  • Start rolling it onto itself, keeping it tight, and when you have almost finished rolling the first rectangle, attach the other half from the edges, proceed in the same way, brush with lard and continue rolling. Continue in the same way by attaching and rolling the second pastry.

  • The pastry roll is ready. Brush the entire roll with lard, including the sides, and wrap it in parchment paper. Let it rest in the fridge for at least 1 hour if not more (I prepared it in the evening for the next day).

  • After the time has passed, take it out of the fridge, trim the sides to make it more uniform and cut into slices with a thickness of 0.4 inches.

  • At this point, take a slice and first flatten it a little, then give it the shape of a hat or cone.

  • Take the cream that you have let cool and fill inside. Close it by matching the ends. Prepare parchment paper on a baking dish or tray and arrange the puff pastries.

  • Bake in a preheated fan oven at 392°F for 20-25 minutes. They need to be golden.

  • The cream puff pastries are ready… sprinkle with powdered sugar and your palate will thank you!!!

Storage

The puff pastries should be eaten on the same day they are prepared. If you have any leftovers, store them in the refrigerator in a closed container for 1 day.

Advice

If you don’t have time to do everything in one day, you can prepare the roll a day before keeping it rolled up with parchment paper in the refrigerator and prepare the puff pastries the next day.
