Donuts and Meatballs in Crust

A really delicious and tasty main course, donuts and meatballs in crust, fun to present at the table also served as an appetizer or aperitif. The preparation is simple and can be customized to your liking by creating different flavors and breadings. In this recipe, I chose to flavor the minced meat with speck and smoked scamorza cheese and another part with pistachio pesto, all covered with puff pastry. I assure you it will not disappoint anyone, not even children. You just have to try and enjoy!!

Ingredients

  • 2 rolls puff pastry (rectangular)
  • 5.3 oz speck slices
  • 3.5 oz smoked scamorza cheese
  • 1.1 lbs mixed minced meat
  • 1 tsp salt
  • pepper
  • 0.7 oz pistachio pesto
  • breadcrumbs
  • turmeric powder
  • salt
  • sweet paprika
  • pistachio granules

Steps

  • First, season the minced meat with salt and pepper, then divide the mixture into two equal parts if you want to make 2 different flavors like I did.

  • Take the speck and smoked scamorza cheese, chop them a bit and then pass them through the food chopper.

  • Insert the mixture into one part of the minced meat, while in the other add the pistachio pesto. Mix everything well.

  • At this point, take the puff pastry roll, and if you only find the round ones, trim the edges to make them straighter like I did, set them aside because you’ll use them for the meatballs.

  • Divide the meat into 120 g pieces and form a “log”, place it on the edge of the puff pastry and roll it up, making the sides match. Cut along the “log”.

  • Fold it in two and cut forming two, then close both ends to form a donut.

  • Season the breadcrumbs with turmeric, paprika, and salt, then bread the donuts.

  • For the meatballs, form balls about 20 g each and cover them with puff pastry.

  • Seal them well and bread them; for the pistachio donuts and meatballs, bread them in pistachio granules.

  • Once finished, let them rest in the fridge for an hour or a little more.

  • Cover a baking tray with parchment paper and arrange the donuts and meatballs.

  • Bake in a preheated oven at 392°F (200°C) for 20 minutes, adjust according to your oven; they should be golden brown.

  • Your donuts and meatballs in crust are ready!!!

Storage

The donuts and meatballs in crust should be enjoyed right after making them.

Advice

If you prefer, you can prepare them in advance and store them in the fridge to be cooked the next day.
