Shortcrust Pastry Procedure

  • In a stand mixer, place cold butter cut into pieces and powdered sugar. Mix for a few seconds, then add the flavors.

  • Then add the egg yolks with a pinch of dissolved salt. Mix and let it absorb.

  • Pour the flour and mix for a few seconds; you will see the dough come together in a few seconds.

  • Do not work it too much, just until it firms up.

  • Form a dough ball, cover it with plastic wrap, and let it rest in the fridge for 30 minutes.

  • Take the dough ball from the fridge. Place it on a work surface, a sheet of parchment paper, place the dough, and put another sheet of parchment paper on top.

  • Roll out a sheet about 1/8 inch thick.

  • Butter and flour the molds.

  • Use the pastry cutter to form flower-shaped or simply round baskets.

  • Take the shortcrust dough you have cut and place it in the molds, pressing with the tartlet to shape it, or help yourself with your fingers.

  • Prick the base of each basket with a fork. Bake in a preheated ventilated oven at 356°F for 15 minutes, as soon as they turn golden, take them out of the oven.
