Homemade glucose is very easy to prepare, you will need sugar, water, and a teaspoon of lemon juice. Glucose is a main ingredient for preparing fondant because it makes it softer, more elastic, and much easier to model, but it is also used for glazes, ice creams, in desserts as a sugar substitute, candies, and mousses. Moreover, homemade glucose is much cheaper than buying it and it takes very little time, you can also prepare larger quantities to be stored for several weeks. Here’s the recipe!

Ingredients

  • 2 cups sugar
  • 3/4 cup water

  • Small Pot
  • Thermometer

Procedure

  • In the small pot, place water and sugar, turn on the heat and let it dissolve. You will need the thermometer to measure the degrees to prevent it from overheating.

  • When the sugar has dissolved and the water becomes clear again, immerse the thermometer keeping an eye on the temperature, when it reaches 221°F turn it off, or for those without a thermometer, turn it off when it begins to boil.

  • Pour it into a glass container and let it cool. Initially, it will seem a bit liquid, but as it cools it will become thicker.

Storage

You can store the glucose in a closed glass jar for several weeks.

Advice

If sugar has settled at the bottom, simply heat it a few minutes in a bain-marie, then stir well to make it smooth again. If there are sugar lumps you can filter it with a sieve to make it even clearer.
