Limoncello

Limoncello is not just a liqueur, but a recipe that speaks of tradition, family, and hospitality. A very simple preparation with just one quality ingredient: lemons that must be garden-grown, peel them without the white part, add the alcohol, and let it rest for 30 days, yes! you need a bit of patience, then let it rest again with the syrup made with water and sugar, finally it will be ready to be enjoyed. It will be a pleasant after-meal treat to savor alone or with company, the recipe can change according to personal taste; I prefer it not very alcoholic to enjoy the sweet and intense aroma of the lemon. So, just try and taste it.

Ingredients

  • 2 cups cups pure alcohol
  • 6 lemons
  • 2.5 cups cups sugar
  • 3.4 cups cups water

  • 1 Jar glass
  • 2 Glass bottles

Steps

  • Take untreated lemons and wash them well, using a brush if necessary. Then dry them.

  • Use a potato peeler to remove the lemon peel, avoiding the white part.

  • Proceed until all lemons are peeled.

  • Wash and dry the glass jar, place all the lemon peels inside, and pour in the alcohol. Close the jar and let it rest for 30 days in a place away from light to prevent the substances extracted from the lemon peels from deteriorating, which would alter the taste of the limoncello.

  • After the resting period, you will notice that the peels have become lighter in color, giving color to the alcohol.

  • Now prepare the glucose. In a saucepan, add the sugar first, then the water, turn on moderate heat and when bubbles start forming on the surface turn off the heat (about 212°F). Let it cool well.

  • Once the glucose has cooled, pour it into the jar with the alcohol and lemon peels.

  • Leave a few inches from the rim.

  • Close with the lid and let it rest for another 15 days.

  • After the second resting period, strain the limoncello.

  • Now you can fill classic bottles or, as I did, gift bottles. Your limoncello is ready to be enjoyed!!

Storage

You can store the limoncello in a cool place away from light like in the pantry, or if you prefer, you can store it in the refrigerator or freezer; the sugar and alcohol prevent it from freezing.
