Mimosa Roll with Cream, Whipped Cream, and Strawberries

The sponge roll is a very simple dessert filled and prepared in different ways. In this recipe, it’s dedicated to Women’s Day, filled with cream, strawberries, and covered in whipped cream, a classic with a delicate taste, yet always the most appreciated. The ingredients are the same as for sponge cake, eggs, and sugar whipped with added flour, baked in 10 minutes, and your roll is ready for festive days, birthdays, or as a sweet finish to lunch or dinner. Ingredients

  • 5 eggs
  • 2/3 cup cake flour
  • 2/3 cup sugar
  • vanilla extract
  • 1 cup heavy whipping cream
  • custard cream
  • strawberries as needed

Steps

First, prepare the cream so that it cools before filling the roll.

  • In the stand mixer, place the sugar and eggs. Whip for about 10 minutes; the mixture should be foamy and fluffy. Then, gradually add the flour from bottom to top and the vanilla extract.

  • Prepare the parchment paper on the base of the sheet pan or baking tray, pour and level the batter well.

  • Bake in a preheated fan oven at 320°F for 10 minutes.

  • After baking, take it out of the oven, place a sheet of parchment paper on top and flip it over, then slowly remove the parchment paper that was on the base. Place another sheet of parchment paper on top and flip it again.

  • Cut all the ends and crumble them, set them aside for decoration.

  • Take the now-cooled cream and fill the sponge roll.

  • Wash and cut the strawberries into small pieces and spread them over the cream. Do not add too many or you will have difficulty rolling it up.

  • After adding the strawberries, start rolling it up, then wrap it in parchment paper and let it rest in the fridge for 1 hour. In the meantime, whip the cream until it is stiff. Remember that the cream, the container, and the whisks must be very cold, then whip at a low speed first and then increase.

  • After the time has passed, take the roll out of the fridge, trim the sides and cover it with whipped cream.

  • After covering the entire roll with whipped cream, take the crumbled sponge parts and sprinkle them on top. Place it back in the fridge for another hour.

Storage

You can store the mimosa roll for up to 2 days in the refrigerator covered with plastic wrap.
