Omelet with Mushrooms and Mozzarella

The super tasty omelet with mushrooms and mozzarella!! Like all omelets, it is an easy and quick second course that can be enriched with different ingredients and made to your liking…. In this recipe, to add even more flavor, I first prepared the sautéed mushrooms and then added them to the eggs and mozzarella. The omelet is not only good served as a second course but also for stuffing delicious sandwiches for the more demanding, and in any way you prepare it, there will be no risk of leftovers because everyone, young and old, really likes it. So if you haven’t made it yet, you just have to try and enjoy!!

Ingredients

  • 8 eggs
  • 3 tablespoons pecorino or parmesan
  • 1.1 lbs sautéed champignon mushrooms
  • 7 oz mozzarella
  • salt
  • pepper
  • oil

Steps

First, prepare the sautéed mushrooms. Wash and cut the mushrooms, in a pan put a little oil and 1 clove of garlic, let it brown a little and then add the drained mushrooms, add salt, pepper, and chopped parsley. Cover and cook for about 15/20 minutes. At the end of cooking, set them aside and let them cool.

  • Now proceed with the eggs, open them and beat them well then add the pecorino/parmesan, salt, and pepper without overdoing it, remember that the mushrooms are already seasoned, mix well and add the mozzarella cut into cubes.

  • Add the cooled mushrooms and mix.

  • In the pan (you can use the same one for the mushrooms) put a little oil and turn on the heat to the minimum, letting it heat for a minute. Pour the egg mixture, arranging them evenly by moving the pan a little to level, at this point still on low heat, cover and let cook patiently for 15 minutes on the first side of the omelet.

  • After about 15 minutes, the omelet will have cooked on the first side, now with a large enough plate or with the omelet pan, flip it over and finish cooking in the same way for another 15 minutes.

  • After 30 minutes your omelet with mushrooms and mozzarella is ready

Storage

You can store the mushroom and mozzarella omelet in the refrigerator covered for up to one day.
