Omelette with Potatoes, Speck, and Mozzarella

The classic dinner saver dish, when you don’t feel like preparing anything complicated, where you open the fridge and ideas pop into your mind just like this omelette with potatoes, speck, and mozzarella, substantial and tasty at the same time, there might be other types of cheeses or cured meats in your fridge, they all work. The omelette has always been one of those budget-friendly and versatile preparations of a unique dish made without stressing too much in the kitchen and is prepared each time with different ingredients depending on what the fridge offers. The omelette is a variant of the French omelette and the Spanish tortilla, and I love them all… So, all that’s left is for you to try and taste!

Ingredients

  • 12 eggs
  • 1.1 lbs potatoes
  • 1/4 cups grated Parmesan cheese
  • 7 oz mozzarella
  • 3.5 oz speck
  • 3.4 tbsp milk
  • salt
  • oil

Steps

  • First, clean and cut the potatoes into small cubes, put them in water, and leave them for 10 minutes.

  • In a pan, put a drizzle of oil and heat it up, then drain the potatoes and pour them into the pan, add a bit of salt, and cook on moderate heat for about 15 minutes, stirring occasionally.

  • Now put the eggs in a container, beat them, and add the potatoes.

  • Cut the mozzarella and add it to the eggs, then the Parmesan, the speck (I chose speck in strips, but small cubes will work fine, or if you have slices, cut them into small pieces), the milk, and the salt.

  • Mix all the ingredients well. In the pan, put a little oil on the bottom, heat it up, and pour the mixture, flatten it with a spatula, cover and cook on low heat for 15 minutes, gently rotating the pan every 5 minutes to distribute the heat evenly to the eggs.

  • After 15 minutes, the eggs will have solidified even on the surface, if not, wait a few more minutes, otherwise, it will spill when you turn it.

  • Flip the omelette and cook it for another 15 minutes, always covered and on low heat.

  • The omelette with potatoes, speck, and mozzarella is ready!! Transfer it to a serving plate, and it’s ready to be enjoyed. Bon appétit!

Storage

You can store the omelette at room temperature until the next day, or in the refrigerator for up to 2 days.
