Oven-Baked Potatoes

A simple countryside side dish, but full of flavor. The oven-baked potatoes offer the simplicity of enjoying something good in a genuine way, just like in the past when little was enough to bring flavors to the table that have now almost disappeared because we always try to complicate any preparation by adding many ingredients to enhance the aromas. I tasted this side dish at a farmhouse in Umbria where everything was produced by them from the meats to the garden and I could savor wonderful dishes where nature around enhanced them even more. The preparation is super simple, just boil the potatoes, press them to open a bit, and season only with oil and salt, then bake them to make them crunchier, in my case in an air fryer. With little, you’ll bring a potato side dish to the table different from the usual that pairs perfectly with meat or fish. So, all that’s left is to try it!!

Ingredients

  • potatoes
  • salt
  • oil
  • water for boiling the potatoes

Steps

  • Wash the potatoes, fill the pot with water, and place the potatoes inside.

  • When the water starts boiling, add salt and cook for about 20 minutes. Check the cooking with the prongs of a fork as it may vary based on the size of the potatoes, if they enter easily, they are ready.

  • When they are ready, gently press the potatoes with the meat tenderizer until they open. Line the baking sheet or pan with parchment paper, or you can bake them in an air fryer as I did; season them with oil and salt and bake at 374°F (190°C) for about 20 minutes until crispy on the surface and golden brown.

  • The oven-baked potatoes are ready, simple, and tasty.

Storage

The potatoes should be consumed immediately, but you can store them at room temperature until the next day. Add a drizzle of oil and reheat them in the oven for a few minutes.
