Potatoes are one of those foods that, when prepared in any way, are always very appreciated by both adults and children. Pan-fried potatoes are a valid alternative to the classic oven-baked ones, especially to avoid turning on the oven during the summer, with the same result, soft inside with a crispy crust on the outside. Pan-fried potatoes are a quick and easy side dish to prepare for lunches and dinners and pair very well with meats and fish. In this recipe, I chose to flavor them with some spices, but you can decide to do so with those you like best. Enjoy the recipe!

Steps
First, clean the potatoes and cut them into pieces not too large, then rinse them a couple of times to remove the starch.
Drain them and dry them on a cloth or with paper towels. Place them in a container and season them with a drizzle of oil, sage, rosemary, chives, and salt.
In a large enough pan, add a bit of oil to cover the entire bottom, heat it and add the potatoes. Cook over moderate heat for the first 5 minutes without stirring, then start moving them gently so as not to break them and continue cooking for about 20 minutes, turning them often.
At the end of cooking, adjust the salt and enjoy them hot.
Storage
It is preferable to enjoy the pan-fried potatoes as soon as they’re made to prevent them from getting soggy.
Note
Use a pan large enough to cook the potatoes without stacking them on top of each other.
