Prussians or Puff Pastry Palmiers are delicious cookies and very easy to prepare with just two ingredients. They are cookies known worldwide, but their origin seems to be French where they are called palmiers or with different names depending on the language. In Italy, they are known as hearts, fans, and prussians. They pair excellently with breakfast, or served with tea or coffee. Crunchy and sweet, they’re irresistible one after another. In this recipe, I used the classic ready-made puff pastry because it should be a simple preparation to make every time you wish and to serve unexpectedly for dinners and lunches. However, if you prefer, you can use excellent homemade puff pastry. So prepare them right away and you won’t stop!

Ingredients
- 1 roll puff pastry (rectangular or round)
- 2.5 oz sugar
- water for brushing

Steps
Unroll the puff pastry roll and lightly wet the entire surface with a brush; this will help the sugar adhere.
Evenly sprinkle the entire surface with sugar, leaving a small portion to add at the end.
Roll the two ends of the pastry from the narrower side toward the center, keeping them tightly rolled.
Bring the sides together at the center and trim the ends if needed. Cut the palmiers into approximately 3/4 inch thick pieces; for uniformity, measure before cutting.
Arrange parchment paper on the baking sheet or tray, spacing them slightly apart. Brush again with a little water and add some of the leftover sugar on each palmier.
Bake at 392°F in a preheated static oven for 20 minutes or until well caramelized, then take them out, flip them, and return them for another 5 minutes.

Heat at 356°F for about 15 minutes, they should be well caramelized.
