Soft mini pizzas for buffet, like the ones we find in bars. The mini pizzas are served as appetizers but are convenient to take out for quick lunches, at the office, at the beach, or as a school snack… The preparation is very simple, like any other pizza dough. You can also freeze the mini pizzas already topped, so you’ll always have something ready for an impromptu dinner… Here’s the recipe for you!

Ingredients
- 4 cups all-purpose flour
- 4 cups Manitoba flour
- 2.5 cups lukewarm water
- 0.42 oz compressed yeast
- 0.7 oz salt
- 1 tbsp oil
- 1 tsp sugar
- tomato sauce q.b seasoned with salt
- mozzarella q.b
- grated parmesan q.b
- oil q.b
- anchovies
- olives

Steps
Prepare the dough by putting the flours, sugar, and oil in the stand mixer. Then add the water in which you have dissolved the yeast, pouring half of it first, let the flours absorb a bit, and then pour the rest. You may only need 2.33 cups of water, depending on the type of flour you use. Lastly, add the salt. Work for about 5 minutes at medium speed. The dough should be soft and smooth. Cover it and let it rise until it doubles in size, about 3 hours. Or as I did, let it rise for a couple of hours at room temperature, then put it in the fridge overnight and take it out the next day to let it rise for another 2 hours or so.
When the dough has risen, form balls of about 1.75 oz, cover them, and let them rest for about 1 hour.
Now we can prepare the mini pizzas. Take a ball and flatten it with your fingers, prepare the baking tray with parchment paper, and place them on top.
Season with sauce, parmesan, a drizzle of oil, and mozzarella.
Choose other ingredients you like; I added anchovies and olives.
Bake in a preheated convection oven at 392°F for about 10-15 minutes. Adjust according to your oven.

Storage
You can store the mini pizzas at room temperature for one day and heat them for a few seconds in the microwave before eating. Alternatively, you can prepare and freeze them cooked or uncooked.
Variation
You can top the mini pizzas as you like, with vegetables, sausages, ham, white with salt and oregano, etc.
