Spaghetti with Prawns

Spaghetti with prawns is the ultimate holiday main course. It is usually prepared for Christmas festivities or Sunday lunches. A recipe that requires few ingredients, only prawns and cherry tomatoes, but they will be enriched by the intense aroma of the bisque (a base made from shellfish scraps) and will become creamy thanks to the pasta being finished directly in the pan. As always, I prefer and recommend fresh prawns, but you can choose to use frozen ones or other types of shrimp. Ingredients

  • 12 prawns
  • 10 cherry tomatoes
  • 2 cloves garlic
  • parsley
  • olive oil
  • salt
  • pepper
  • bisque

Steps

  • Clean the prawns by removing the head and shell, which you will set aside to prepare the bisque.

  • Then cut the prawns into not too small pieces. In the meantime, while preparing the sauce, bring water to a boil for the spaghetti.

  • In a pan, place olive oil, garlic, and parsley stems, sauté over low heat for a few minutes, then add the prawns and let them brown for 1 minute, just enough time for them to change color.

  • Remove the garlic and add the cherry tomatoes cut in half or quarters, salt, and pepper. Cover and let cook for a couple of minutes.

  • Drop the spaghetti into the salted water and cook for about 3/4 minutes, then continue cooking in the pan.

  • After a few minutes, drain the spaghetti keeping the cooking water aside and pour them into the pan with the prawns. Add the bisque and a ladle of cooking water and start combining the spaghetti like risotto.

  • Finish cooking, adding a bit of cooking water as needed, they should be creamy. Adjust for salt, pepper, and add some parsley.

  • The spaghetti with prawns are ready.

Variations

If you can’t find prawns, you can replace them with shrimp, king prawns, scampi, etc.
