The stuffed anchovies can be served as a main course or as a truly delicious seafood appetizer. There are several variations for this type of preparation, but the ingredients are more or less the same: bread, cheese, garlic, etc. While they are usually baked, in this recipe they will be pan-fried in just a few minutes. Even though anchovies are an inexpensive fish, they are suitable for many recipes and are also healthy, being a blue fish. This confirms that something good can be prepared even with little. Please make sure the anchovies are fresh.

Ingredients

  • 1.1 lbs anchovies
  • 5.3 oz sandwich bread
  • 1/4 cup milk
  • 1 tbsp grated Parmesan cheese
  • 1 clove garlic
  • parsley
  • salt
  • pepper
  • oil

Procedure

Start by cleaning the anchovies: remove the head and guts, then open them and remove the central bone.

  • Cut or chop the slices of sandwich bread and pour the milk, let it absorb well then season with grated cheese, parsley, garlic, salt, and pepper.

  • At this point, you can fill the anchovies. Take an anchovy and fill it with a bit of the bread mixture and then place another anchovy on top.

  • Continue until all the anchovies are filled.

  • In a pan, add a drizzle of oil, salt, and pepper, arrange the anchovies inside, add a bit more oil on top, and a bit more salt and pepper. Cover and cook for 3 minutes, then turn them over and cook for another 3 minutes (if the anchovies are small, there’s no need to turn them).

  • The stuffed anchovies are ready!!

Advice

For this type of preparation, I recommend using not very small anchovies and ensuring they are fresh.

Storage

If there are leftover anchovies, you can store them in the fridge covered with plastic wrap and consume them the next day.
