A classic main course that everyone has prepared at least once, the stuffed meatloaf is a simple preparation where everyone can choose to fill it according to their tastes. It is usually a Sunday dish when dining with more people because it can be prepared in advance and sparks curiosity due to its filling, it’s hard to find someone who doesn’t like it. The recipe I propose is simple and delicate, in addition to the classic ham and cheese I added mashed potatoes to give it even more softness and keep it moist, preventing the inside from drying out. You can serve it with a great and healthy side of grilled vegetables. So, all that’s left for you to do is try it!!

Ingredients
- 1.5 lbs mixed ground meat
- 1.1 lbs potatoes
- 1/4 cup grated Parmesan cheese
- 8 slices smoked provolone
- 3.5 oz cooked ham
- salt
- pepper

Steps
First, boil the potatoes in salted water, adjust the cooking time based on the size of the potatoes, about 20 minutes, but test them by piercing with a fork to see if they’re soft enough.
Then peel them and mash them with a potato masher. Season with Parmesan, salt, and pepper and set aside.
Now prepare the meat and only add salt, form a loaf, and between two sheets of parchment paper create a disc, using a rolling pin to make it even in thickness.
At this point, spread the mashed potatoes over the entire base with an offset spatula, then cover with provolone and ham.
Roll it up, closing all the edges as much as possible to make the meat adhere. When you have finished closing the meatloaf, prepare some breadcrumbs mixed with turmeric and roll the meatloaf to bread it on all sides.
Wrap it in parchment paper and let it rest in the fridge for at least 30 minutes.
Before cooking, drizzle with oil and bake at 392°F for about 40 minutes.
The stuffed meatloaf is ready!! Let it cool slightly and cut into slices about 3/4 inch thick and serve. Enjoy your meal!
Storage
You can store the stuffed meatloaf in a covered container in the refrigerator for 2 days.
Notes
If you prefer, you can prepare the stuffed and breaded meatloaf the day before, keeping it in the refrigerator wrapped in parchment paper and cooking it the next day.
