Sweet and Sour Onion

The sweet and sour onion is a simple and tasty side dish to pair with meats, fish, cheeses, or to fill sandwiches, bruschetta, etc. The preparation is very simple and economical; you only need red onions (in my case from Acquaviva delle Fonti being from Bari) or white ones, seasoned with vinegar, sugar, salt, oil, and pepper, and in about 20 minutes they will be ready. Onion can be a food that not everyone likes initially, but once you start tasting it, it’s greatly appreciated both cooked and raw. At this point, there’s nothing left to do but try it!!

Ingredients

  • 1 lbs red onions
  • 1 tsp sugar
  • 2 tbsp white wine vinegar
  • oil
  • salt
  • pepper
  • Pan

Steps

  • First, take the onions, clean them, and slice them thinly (mine was a single onion weighing 450 g.) while doing so, I recommend putting them in a container with water.

  • Then, in the pan, add enough oil to cover the entire bottom, heat it up, and add the drained onion and a bit of salt. Let them wilt over low heat for about 10 minutes; do not add water because the onion will release it.

  • After the time has passed, you will see the onion is softer and there will be more liquid at the bottom, at this point, raise the heat a bit and add the pepper, sugar, and vinegar, stir and let it evaporate.

  • Then lower the heat again and cook for another 10 minutes, stirring occasionally.

  • You will see that the liquids have thickened, at that point you can turn it off.

  • Your sweet and sour onion is ready!!

Storage

You can store the onion in the refrigerator for 2 days.
