Venere Rice Salad with an intense aroma, featuring a mix of ingredients that perfectly complement each other. Usually, this rice is seasoned with shrimp, zucchini, and aromatic herbs; my version is more “complete” yet very tasty and flavorful, requiring cherry tomatoes, cooked ham, sausages, peas, zucchini, capers, canned tuna, and “barattieri” (similar to a melon-cucumber hybrid found in Puglia, but a regular cucumber will do). Ingredients
- 4 cups Venere rice
- 2 zucchini
- 2 barattieri (caroselli)
- 7 oz diced cooked ham
- 1.8 oz pickled capers
- 7 oz cherry tomatoes
- 9.5 oz canned tuna in oil (3 cans of 3 oz each)
- 2 pork sausages
- 7 oz peas
- salt
- oil
- soy sauce
Steps
First, cook the Venere rice. Then proceed with the preparation of all the ingredients. Dice the zucchini and cook them in a pan with a drizzle of oil. Boil the peas with a bit of salt in the water. Boil the sausages and at the end of cooking (about 10 minutes), cut them into pieces.
Cut the cherry tomatoes and barattieri (caroselli) into fairly small pieces.
Once the rice is cooked, drain it and place it in a container.
At this point, start adding the ingredients starting with the tuna, drain it and mix well with the rice, then add the capers, zucchini, sausages, and peas. Combine the ingredients; finally, add the tomatoes and barattieri (caroselli).
Finish with oil, salt, and soy sauce.
Your Venere rice salad is ready!!
