Zucchini Stuffed Omelette Roll

The zucchini stuffed omelette roll is a great main or appetizer, very tasty and can be prepared in many ways. The preparation is very simple: just 10 minutes of baking, and you can fill it according to your taste. In this recipe, I chose cooked ham and Emmenthal, which go perfectly with zucchini. If you prefer, instead of zucchini, you can flavor the eggs with spices. The stuffed omelette roll is a quick idea also for trips and outdoor meals. So, just bring your imagination to the table!!

Ingredients

  • 12 eggs
  • salt
  • pepper
  • 1.1 lbs zucchini
  • 1.75 oz grated Parmesan or Pecorino cheese
  • 7 oz cooked ham
  • 6 oz sliced Emmenthal cheese

Steps

  • First, wash and grate the zucchinis with a grater, then place them in a sieve with a pinch of salt to help them release their water.

  • Meanwhile, beat the eggs and season them with Parmesan, salt, and pepper. After a few minutes, slightly squeeze the zucchinis with your hands and add them to the eggs. Mix everything well.

  • Line the bottom of the baking dish with parchment paper and pour in the eggs, gently tilting the dish to spread the eggs evenly, creating as regular a shape as possible.

  • Bake at 356°F in a preheated static oven for 10 minutes.

  • At this point, the omelette is ready. Remove it from the oven and place a layer of plastic wrap on top, then flip the omelette.

  • Now you can fill the roll, covering it with slices of cooked ham and Emmenthal.

  • Roll it up from the shorter side, keeping the roll tight, and wrap it in plastic wrap. Let it rest for about 30 minutes to compact and flavor well.

  • Retrieve the roll and cut slices of about 0.75 inches.

  • Your stuffed zucchini omelette roll is ready to be enjoyed!!

Storage

You can store the stuffed omelette roll at room temperature if consumed within the day; otherwise, wrap it in plastic wrap and keep it in the fridge for up to 2 days.
