Ingredients
- 12 eggs

- 1.1 lbs zucchini
- 1.75 oz grated Parmesan or Pecorino cheese
- 7 oz cooked ham
- 6 oz sliced Emmenthal cheese

Steps
First, wash and grate the zucchinis with a grater, then place them in a sieve with a pinch of salt to help them release their water.
Meanwhile, beat the eggs and season them with Parmesan, salt, and pepper. After a few minutes, slightly squeeze the zucchinis with your hands and add them to the eggs. Mix everything well.
Line the bottom of the baking dish with parchment paper and pour in the eggs, gently tilting the dish to spread the eggs evenly, creating as regular a shape as possible.
Bake at 356°F in a preheated static oven for 10 minutes.
At this point, the omelette is ready. Remove it from the oven and place a layer of plastic wrap on top, then flip the omelette.
Now you can fill the roll, covering it with slices of cooked ham and Emmenthal.
Roll it up from the shorter side, keeping the roll tight, and wrap it in plastic wrap. Let it rest for about 30 minutes to compact and flavor well.
Retrieve the roll and cut slices of about 0.75 inches.

You can store the stuffed omelette roll at room temperature if consumed within the day; otherwise, wrap it in plastic wrap and keep it in the fridge for up to 2 days.
