- 2 fennel
- 1 onion
- 1 cup cherry tomatoes
- 1 cup breadcrumbs
- 1/2 cup Parmesan cheese
- 1 clove garlic
- 1 bunch parsley
- to taste olives (I use Taggiasca)

To make your BAKED MEDITERRANEAN GRATINATED FENNEL, you’ll need just a few simple steps for a side dish with an explosive taste.
First, remove the tougher outer parts from the fennel and slice it thinly.
Rinse the fennel slices under running water and place them in a bowl.
Add a thinly sliced onion, I used a white one, but a red or Tropea onion would be even tastier. It’s an ingredient that fits perfectly, trust me!
Also add the cherry tomatoes, cut in halves or quarters, depending on their size.
Also add a drizzle of oil, salt, pepper, finely chopped parsley, and a crushed clove of garlic, mix!
Add the breadcrumbs and Parmesan, mix with your hands, it will be easier to blend the ingredients together.
At this point, all you need to do is prepare a baking tray with parchment paper, distribute the fennel, and add the olives.
Place the fennel in the oven for about 20 minutes at 392°F (200°C) in fan mode, or until a tempting crust has formed on top.
