Ingredients

  • 4 veal ossobuco
  • 2 white onions (or yellow)
  • 3 cups Il mio Brodo STAR – Verdure
  • as needed flour (any type)
  • as needed olive oil
  • as needed salt
  • as needed pepper
  • as needed chopped parsley

Steps

  • To prepare the braised ossobuco with onions in a pan, start by lightly flouring the meat on both sides. 
    In a large pan, heat some extra virgin olive oil and brown the ossobuco over high heat for about 5 minutes, with salt and pepper, until they are well browned on both sides.

  • Once browned, add the onions cut into thin slices and cover with Il Mio Brodo Star – Verdure. Cover with the lid leaving it slightly ajar and let it cook over medium heat until the broth is completely absorbed, the onions are softened, and the meat can be cut with a fork. Turn the ossobuco only halfway through cooking and add a little broth if necessary.

    The flour, together with the broth and onions, will have formed a succulent cream.

  • When the ossobuco is ready, serve the meat with onions and the delicious cream on top. Then finish with a sprinkle of parsley or a sprig of fresh rosemary. 
    If you wish, accompany the dish with a side of mashed potatoes or good polenta and serve hot!

Variations

You can enrich the dish with the addition of other vegetables, for example, sliced carrots or chopped celery. The vegetables will add more sweetness and a richer texture to the sauce.

An additional variation involves adding tomato to the base, creating a richer and more flavorful sauce. You can add tomato puree or crushed canned tomatoes along with the broth, giving a tangy and lively note that balances the richness of the meat.

Storage

Braised ossobuco with onions can be stored in the refrigerator, covered with plastic wrap or in an airtight container, for 2-3 days. If you wish to store them longer, you can freeze them for up to 2-3 months. When reheating, add a bit of hot broth to keep the meat tender. 

It is better to thaw them in the refrigerator before consuming. 

Remember that onions may become softer during storage.
