Steps

  • For the making of your mozzarella bites Marinated Mozzarella Bites are a QUICK and Tasty APPETIZER.

In a large jar, add plenty of olive oil, a pinch of salt, pepper (I used filtered pink pepper), zest of half a lemon, and two tablespoons of lemon juice. Meanwhile, rinse the capers to remove excess salt.

Chop the sun-dried tomatoes and add them to the marinade.

  • Also chop Taggiasca olives and capers. Add everything to the jar.

  • Add the mozzarella bites to the marinade and mix by shaking the hermetic jar. Let rest for at least 20–30 minutes so they absorb all the Mediterranean flavors; if you can, even 2-3 hours.

Before serving, give it a final stir to evenly distribute the marinade. Serve the mozzarella bites as an appetizer or aperitif: they are perfect to enjoy with a toothpick or on a bread bruschetta that collects the flavorful dressing.

Storage

The Mediterranean mozzarella bites can be stored in the fridge for 1–2 days in an airtight container. With time, they become even more flavorful, but it’s best to consume them shortly because the mozzarella tends to release liquid. Before serving, take them out of the fridge for 10–15 minutes to bring back the oil and aromas. Avoid freezing them: the cheese’s texture wouldn’t remain optimal.

Tips

Customize the dressing: add fresh basil, oregano, or a pinch of chili pepper if you want a livelier touch.

Choose quality ingredients: extra virgin olive oil, sun-dried tomatoes, and olives make a real difference in an uncooked recipe.

If you run out of mozzarella and still have marinade: use it on bruschettas or to dress delicious spaghetti!

Of course: the lemon adds freshness, but you can omit it or replace it with a bit of white wine vinegar or light balsamic vinegar.
