- 8.8 oz mascarpone
- 8.8 oz mixed berries
- 2 egg whites
- 3 egg yolks
- 3.2 oz sugar
- 1 tbsp sugar (for the mixed berry sauce)
- 1 tbsp lemon juice
- 1 tbsp liqueur (rum, marsala, strega, maraschino)
- 1 packet Paneangeli sparkling powdered sugar
Steps for Mixed Berry Tiramisu with Pandoro in a Glass
To make this Mixed Berry Tiramisu with Pandoro in a Glass, the first step is to prepare a mixed berry sauce.
Take 2.8 oz (80 g) of mixed berries, place them in a saucepan along with the lemon juice and a tablespoon of sugar.
Stir until the sugar dissolves, the berries break down, and release their juice. Let it cool.Meanwhile, prepare the mascarpone cream.
Start by separating the egg yolks from the egg whites. Place the egg yolks in a bowl with half the sugar and whisk with an electric mixer until you obtain a light, frothy, and creamy mixture.
At this point, gradually incorporate the mascarpone and chosen liqueur, continuing to mix until you get a smooth and homogeneous cream.
In another bowl, beat the egg whites until stiff peaks form, then gently fold into the mascarpone and yolk mixture, stirring from bottom to top to prevent deflating. The cream is ready.Cut three horizontal slices from the pandoro, each about 0.8 inches (2 cm) thick. Using the glasses you’ll use to assemble the tiramisu, cut out circles—you’ll need 8.
