Quick Coffee Parfait without Mascarpone, a super creamy, no-bake spoon dessert that you can quickly prepare either in individual servings or as a sliceable loaf.
There are different techniques for making parfaits; I used the classic recipe involving eggs, specifically egg whites, to create an Italian meringue without using mascarpone.
I used instant coffee to give a more pronounced flavor. If you use espresso, you can’t add too much if you want it to set and not melt without using gelatin.
In short, a no-bake coffee parfait, super creamy and with only 4 ingredients!

Ingredients
- 2 cups heavy whipping cream
- 1.4 oz instant coffee
- 0.5 cup granulated sugar
- 4 egg whites
- 2 tbsp powdered sugar
Steps for Quick Coffee Parfait without Mascarpone
To prepare the coffee parfait, the first thing you need to do is dissolve the instant coffee in a small portion of the cream. Stir until it is completely dissolved.
In a separate bowl, combine the egg whites with the granulated sugar. Mix with an electric mixer until you get a firm and glossy foam, which is the Italian meringue.
In another bowl, place the heavy whipping cream. If it’s not already sweetened, add two tablespoons of powdered sugar.
When it is almost fully whipped, add the dissolved instant coffee and continue mixing until the cream is fully whipped.
At this point, add the Italian meringue. Continue mixing with the mixer without fear of deflating the mixture.
Once all the ingredients are well combined, prepare the molds you want to use. You can also use a regular loaf or muffin mold. Just line it with some plastic wrap to ease removal. If you use silicone molds, you won’t need it.
Fill with the coffee cream and cover with plastic wrap.
Transfer to the freezer for at least 5 hours.
After the resting time in the freezer, remove your quick coffee parfait from the mold, dust with cocoa powder, and decorate as you wish. I used amaretti, but pieces of chocolate, a dollop of cream, or a coffee bean would also be nice. Serve and see how deliciously creamy this quick coffee parfait without mascarpone is.
