Ingredients
Sicilian-Style Delicious Zucchini Balls
- 2 medium zucchinis
- 3 eggs
- 2 oz cherry tomatoes
- 10 green olives (pitted)
- 1 tbsp pine nuts
- 4 tbsps Parmesan cheese
- 6 tbsps breadcrumbs
- to taste salt
- to taste pepper
- as needed olive oil (for frying)
- to taste fennel (dried-can be omitted)
Steps for Sicilian-Style Delicious Zucchini Balls
To make the Sicilian-Style Delicious Zucchini Balls, first deal with the zucchinis.
Wash them, cut off the ends, and grate them.
Transfer the grated zucchinis onto a kitchen towel and squeeze as much as possible to remove the water.
Then place them in a large bowl.
Add the eggs, Parmesan cheese, breadcrumbs, salt, and pepper to the zucchinis. Give it a first mix and also add diced cherry tomatoes, pine nuts, and chopped olives. If you want, you can also add a bit of dried wild fennel. Mix until the mixture is soft but cohesive. If it is still too soft to form balls, add one or two more tablespoons of breadcrumbs. Take some of the mixture, create a ball by rolling it between your hands, and flatten it.
