Ingredients for Almond Butter Cookies

  • 5.3 oz almond butter (100%)
  • 1 tbsp plant-based milk
  • 1 tbsp rice flour
  • to taste brown sugar (optional)

Steps for Almond Butter Cookies

  • In a bowl, pour the almond butter. Add the tablespoon of plant-based milk and the tablespoon of rice flour. Knead with your hands until you get a dough.

    If the dough is too sticky, add a bit more rice flour.

    Now form balls, place them directly on the baking sheet lined with parchment paper, and flatten them with a glass to create the cookies. Alternatively, you can also flatten them with a fork, giving them the classic appearance of peanut butter cookies.

    Sprinkle with a bit of brown sugar and bake in a preheated oven at 356°F. Let them bake for about 10 or 15 minutes.

    The cookies will remain soft, so once made, leave them in the open oven to allow them to harden slightly.

Tips

These cookies can be made with any type of nut butter, such as peanut or cashew or hazelnut butter. I use 100% butters, so without added sugars.

The flavor will be quite neutral, so you might want to sweeten the dough slightly or serve them with cocoa cream or honey.

The cookies can be stored for about 6-7 days in an airtight container at room temperature.

The texture will be slightly dry, so it’s advisable to serve them with a glass of milk, tea, or an herbal tea.
