Cauliflower Cutlets

Did you know that you can make crispy cutlets with cauliflower?

The crispy and fragrant breading of breadcrumbs and spices will enhance the delicate flavor of the cauliflower, turning it into a delicious dish for a tasty, healthy, and very easy vegan or vegetarian alternative.

Ingredients for Cauliflower Cutlets

  • 1 cauliflower
  • 5.3 oz breadcrumbs
  • 2 tablespoons extra virgin olive oil
  • 3.5 oz tomato purée
  • to taste spices

Procedure

  • Start by cleaning the cauliflower from the stalk, and gently cut it into slices about 0.8 inches thick.

    Brush the slices with extra virgin olive oil on both sides.

    Separately, in a dish or bowl, create our breading with the spices and breadcrumbs. The spices are to taste and can vary, I used thyme, sweet paprika, and oregano.

    Spread a tablespoon of tomato purée on each slice.

    Place them on a baking sheet lined with parchment paper, drizzle with olive oil, and bake at 350°F for about 25 minutes, or until a nice golden crust forms.

    You can serve them immediately or even warm.

Tips for Cauliflower Cutlets

The dish as indicated is a valid vegan alternative, but you can complete it with pieces of provola or grated cheese for the vegetarian version.

These cutlets can be prepared in advance and then cooked and served, or stored already cooked, but I advise against freezing them. Instead, keep them in the fridge in an airtight container.
