Ingredients for Cocoa pudding without butter
- 1/3 cup water
- 3 tbsps oat flour
- 1 tsp cocoa powder
- Half tablespoon erythritol (or sweetener of choice)
- 2 oz egg whites
Steps for Cocoa pudding without butter
Put all the ingredients in a small pot, bring it to a low flame, and let it thicken, stirring continuously with a whisk and being careful not to let it stick to the edges.
Once thickened, transfer it to a small bowl and let it rest in the fridge for at least two hours (better overnight)
Once taken out of the fridge, decorate with the topping of your choice, such as:

🥜 nuts
🍯 honey or various butters
Advice and notes
– This pudding is very easy to make and lends itself to some modifications if desired, we can replace the neutral oat flour with flavored oat flour. In this way, there will be no need to add sweeteners or cocoa.
– For the same reason, we can replace the cocoa with whatever we prefer, such as vanilla or fruit yogurt.
– Additionally, I used pasteurized egg whites from a carton, but you can use fresh egg whites that we will first pasteurize in a separate pot by bringing them to a boil.
– If you don’t like erythritol, you can replace it with stevia or use granulated sugar.
