Steps for Cod with Tomato Sauce
In a pan, heat a drizzle of oil with olives and capers. If you don’t like olives and capers, you can omit them from the recipe and substitute with a clove of garlic. Pour in the tomato puree and a pinch of salt. Let it cook for a few minutes, stirring.
Rinse the cod fillets. If frozen, you can use them still frozen. Add them to the pan along with the tomato sauce.
Lower the heat and cover, cook for 15 minutes, stirring occasionally.
In the last 5 minutes, taste and adjust salt if needed.

Advice and Notes
This dish is prepared in really few minutes and is very simple. We can enrich it with some tweaks if desired. We can add olives and capers to the sauce, give it a kick by melting some anchovies, or add spiciness with chili pepper.
I recommend serving it hot with some toasted bread for dipping.
