- 1 lb potatoes
- 3 tablespoons potato starch
- 1 tablespoon grated Parmesan cheese
- to taste salt
- to taste pepper
- 3.5 oz cooked ham
- 3.5 oz smoked provola cheese

Procedure
Let’s start by boiling the potatoes. You can use the classic pot boiling method, or speed up the process with the microwave cooking method.
Once boiled, let them cool and mash them with a potato masher or the appropriate tool.
Add the remaining ingredients to the potatoes and mix well with your hands until you have a smooth mixture.
Divide into 12 balls and then form 12 discs.
Place diced provola cheese and some cooked ham in the center of 6 discs.
Use the other 6 discs as “lids” and seal them well at the edges.

Now we can cook.
– We can cook them with a drizzle of oil in a pan, browning on both sides for 5 or 6 minutes. With this cooking method, the patties will be slightly oily.
– Alternatively, we can cook them in a static oven at 350°F for about 25 minutes, flipping halfway through.
– My faster method involves microwave cooking with a crisp plate for 15 minutes.
Tips and Vegetarian and Vegan Alternatives
This is a Gluten-Free recipe
But it can also be made vegetarian by omitting the cooked ham, or vegan by replacing Parmesan with nutritional yeast and filling the patties with grilled vegetables.
The patties can be stored cooked in an airtight container in the fridge for 2 or 3 days, or you can freeze them in portions.
