Ingredients for a 4×8 inch pan
- 3 bananas
- 2.8 tbsp vegetable oil
- 2.8 tbsp brown sugar
- 1.4 cups flour
- 1 package vanillin
- 1 package baking powder
- 1 pinch salt
- as needed dark chocolate (in chunks)
- as needed walnuts (roughly chopped)
- as needed grated coconut (optional)

Procedure for Eggless Banana Bread
Preheat the oven in static mode to 350°F.
Mash the bananas.
In a bowl, combine the vegetable oil with the brown sugar and start working with the whisk. Then add the banana puree and vanillin.In another bowl, combine the flour, baking powder, and pinch of salt.
Combine the dry ingredients with the liquid ones and mix with the whisk.
Roughly chop the walnuts and chocolate and add them to the batter.
Do not overmix.Pour the batter into the pan lined with parchment paper.
Garnish with grated coconut and more chocolate and bake for about 35/40 minutes or until golden.Remember to do the toothpick test: poke the loaf on the left, in the center, and on the right to ensure it is cooked evenly.
