Chestnuts are among the most typical fruits of autumn. Their sweet flavor lends itself to many recipes, but the most classic way to enjoy them is as roasted chestnuts. With the tricks I’ll show you, you’ll have well-cooked microwave chestnuts, even a bit charred.

  • 1.1 lbs chestnuts
  • 4 cups water
  • to taste coarse salt

How to Cook Chestnuts in the Microwave

  • Score each chestnut individually using a sharp knife or a chestnut cutter, making an X on the back of each chestnut. Do this carefully to prevent them from bursting during cooking.

  • Now, bring water to a boil in a large pot, and once boiling, salt it and add the chestnuts.

  • Let them boil for 10 minutes.

  • After 10 minutes, drain them and place them on the crisp plate, ensuring the cuts face up and they are well spaced.

  • Cook with the Crisp Function for 10 minutes.

    Alternatively: Cook on the highest combined Microwave + Grill setting for 10 minutes and then grill for another 5 minutes.

    Once cooked, transfer them to a plate and cover with a damp cloth for 3 or 4 minutes. This way, they will peel perfectly.

Additional Tips, Notes, and Tricks

For this recipe, I used typical Irpinian chestnuts, which are very large and sweet. Any chestnut variety suitable for roasting or even marrons will do, as very small ones might become drier.

If you want a more charred effect after cooking, you can toss the chestnuts on a very hot grill on the stove for a few minutes.

The damp cloth can also be sprayed with red wine for a more intense aroma (I tried it, it’s fantastic, I recommend it)
