The spookiest night of the year is approaching, and what better way to celebrate it than with a delicious yet light treat? Today I’m bringing you into the kitchen with me to make some light brownies, a healthier version of classic American treats, but just as soft, chocolaty, and irresistible.
They are perfect for a family snack, a party with friends, or as a last-minute dessert for Halloween: you can serve them as they are, or decorate them in a fun way with chocolate cobwebs, sprinkles, or little whipped cream ghosts.
The best part? These brownies are butter-free, ready in just a few minutes and can be cooked in the microwave, making them ideal for those with little time who do not want to compromise on taste. A simple, light, and impressive recipe, perfect for impressing all your guests.

Ingredients for Light Brownies
- 5.3 oz 70% dark chocolate
- 1/4 cup vegetable oil
- 2/3 cup all-purpose flour (or cocoa-flavored oat flour)
- 4 oz erythritol (or sugar)
- 2 eggs
- 1/2 cup hazelnuts (optional)
- 1 pinch salt
- 1 packet baking powder

What you need to make light brownies

Procedure for Light Brownies
In a bowl, beat the eggs with the sugar (or erythritol), then add the dark chocolate melted in the microwave or in a bain-marie.
Keep the mixer running while adding the vegetable oil slowly and a pinch of salt. Gradually add the sifted flour, to which you have added the packet of baking powder, and mix with the mixer until you get a smooth and thick batter.
Coarsely chop the hazelnuts, add them to the batter, and mix with a spatula. Pour into the baking dish lined with parchment paper suitable for microwaves or buttered and floured.
Cook in the microwave at 650w for 10 minutes. Or in a conventional oven at 350°F for 25 minutes.
Always do the toothpick test. The brownies will remain a bit moist.
Storage, decoration, and tips
You can decorate the light brownies with colored sprinkles, sugar crystals, or themed decorations (in my case, I made them for Halloween).
The brownies keep well in an airtight container in the fridge for a few days. You can also freeze them.
