Ingredients for Light Crêpes

  • 2/3 cup oat flour (or all-purpose flour)
  • 1 egg (or 100 g egg whites)
  • 1/2 cup skimmed milk (or plant-based milk)
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp sugar (or sweetener)

  • 1 Whisk hand whisk
  • 1 Pan crepe pan

Steps

  • Vigorously mix all the ingredients with the whisk, starting with the eggs and sugar, then the milk, and finally the sifted flour. Set aside a portion of the batter and add the cocoa powder. This way, we will have two batters of two different colors.

    Easy Yogurt Muffins
  • In a nice hot non-stick pan, cook a tablespoon of batter for only a few minutes, leveling it well. Just wait the time it takes for the batter to set and flip it to the other side. Stack the crêpes, depending on the size of the pan, and let them cool. We can then fill them.

Filling, notes, and tips

Once cooked, the light crêpes can be filled as we prefer.

Hazelnut cream, jam, nut butter, or even yogurt.
A teaspoon of about 0.5 oz is enough to ensure a tasty but not overly caloric breakfast.

Sprinkle with a little powdered sugar before serving.
