Ingredients for Microwave Chicken and Potatoes
Who says chicken breast has to be boring? In this easy, quick, and super tasty and hearty version of chicken and potatoes, you’ll love it!
This recipe can be prepared with a crisp plate or a simple microwave dish.
- 14 oz chicken breast
- 14 oz potatoes
- 3/4 cup breadcrumbs
- 1/2 cup grated Parmesan
- 1.5 tbsp extra virgin olive oil
- to taste salt
- to taste spices (thyme and rosemary)

Cut the chicken into strips and marinate with a little milk.
Peel and cut the potatoes, placing them in a bowl of cold water to lose some starch. This procedure will make them tender during cooking.
Place the potatoes on the crisp plate (or in a microwave dish), drizzle with oil, and cook with crisp function for 10 minutes (alternatively use grill and microwave combined at 650w if you don’t have the crisp plate).
Meanwhile, prepare the breading by combining breadcrumbs, Parmesan, salt, spices, and a drizzle of oil. Bread the chicken strips.
Remove the potatoes from the oven, stir them, and place the breaded chicken strips on top. Cook for another 10 minutes with the same settings as before.
Serve immediately, with sauces of your choice.
