  • 2 fennel bulbs
  • 2 tablespoons breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • to taste salt

Steps for Microwave Gratinated Fennel

  • Wash the fennel bulbs, remove the bottom and the stalk, and cut them into 8 parts. Put them in a pot with cold water and bring to a boil. Let them cook for about 8 minutes from when the water starts boiling. This will make them very soft.

  • Once drained, arrange them on the crisp plate, trying to spread them in a single layer.

  • Dust them all with the Parmesan cheese, and then with the breadcrumbs.

  • Adjust with salt and pepper and finally finish with the extra virgin olive oil.

  • Cook in the microwave in combination mode 650w + grill (or crisp mode) for about 8 minutes. They will be crispy and delicious. I recommend serving them very hot.

Tips and Notes

This side dish is really good and impactful, you can use it to accompany both fish and meat main courses, or use them to enrich your salads or vegetarian dishes.

To speed up preparation, you can prepare the boiling part in advance, or omit it completely. In the latter case, however, the fennel will be less soft and will need a couple more minutes of cooking.
