  • 2 fennels
  • 2 tablespoons breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • to taste salt
  • to taste pepper

Steps for Microwave Gratinated Fennel

  • Wash the fennels, remove the end and the stalk, and cut them into 8 parts. Place them in a pot with cold water and place on the stove. Let them cook for about 8 minutes from boiling. This will make them beautifully soft.

  • Once drained, lay them on the crisp plate, trying to arrange them in a single layer.

  • Sprinkle them all with Parmesan cheese, and then with breadcrumbs.

  • Adjust with salt and pepper and finally complete with extra virgin olive oil.

  • Cook in the microwave in combined mode 650w + grill (or crisp mode) for about 8 minutes. They will be crispy and delicious. I recommend serving them hot.

Tips and Notes

This side dish is really tasty and impressive, you can use it to accompany both fish and meat main courses, or use it to enrich your salads or vegetarian dishes.

To speed up preparation, you can pre-cook them, or omit this step entirely. In the latter case, however, the fennel will be less tender and will need a couple more minutes of cooking.

Store them in an airtight container in the refrigerator for 3 to 4 days.
