  • 4 oranges
  • 3 eggs (medium)
  • 2/3 cup granulated sugar (about 140 g)
  • 1/3 cup vegetable oil (about 70 ml)
  • 2 tsp baking powder
  • 1 7/8 cup all-purpose flour (about 230 g)
  • 1/3 cup potato starch (or cornstarch, about 50 g)
  • pinch salt
  • as needed powdered sugar (for decorating)

Steps for Orange Snack Cakes without Milk and Butter

  • Start by washing the oranges well and juicing them with the citrus juicer. Set the juice aside.
    In a bowl, break the eggs and beat them with the electric mixer together with the sugar. Keep mixing with the electric mixer until the mixture becomes pale and frothy; at this point add the vegetable oil and continue beating with the whisks.

  • Now, keeping the mixer at medium speed, add the flour, baking powder and cornstarch little by little until everything is well incorporated into the batter.

    To finish, add the orange juice in a thin stream. The batter will be semi-thick; complete with the pinch of salt.

    Pour the batter into the molds you prefer, whether muffin tins, bar molds or mini loaf pans, and bake in a conventional oven at 356°F for about 20 minutes. Before removing from the oven, perform the toothpick test.

  • Once slightly cooled, you can dust with powdered sugar and serve.
