How to Prepare Zucchini Rösti
It takes really few steps to prepare carrot rösti.
Peel and grate the zucchini and potatoes with a grater or a Food Processor Chopper and place them in a bowl.
Add salt and pepper and mix everything well, and let it rest for a few minutes.
With the help of a pastry ring, shape the rösti directly on the oven tray or the crisp plate of the microwave. Do not make them too thick or too thin, so they cook evenly and maintain their nice round shape.
Bake in a preheated oven at 356°F (180°C) for 15 minutes or in the microwave using the grill function for 10 minutes.
They’re ready!
How to Serve Zucchini Rösti
Great for a vegan main course, they will be perfect served with a yogurt dressing or a Greek sauce.
Alternatively, they are a valid side dish for meat or fish main courses.
I do not recommend freezing them once cooked, but they are perfect for storing in the fridge in an airtight container or vacuum-sealed.
