  • 1 bell pepper (red)
  • 1 bell pepper (yellow)
  • 1 clove garlic
  • to taste parsley (fresh)
  • to taste fine salt
  • to taste extra virgin olive oil

Steps

Wash the peppers, dry them, and slice into strips on a bread cutting board. Also wash the zucchini and cut into cubes.

  • Place the peppers and zucchini in a bowl and season with fresh parsley, a drizzle of extra virgin olive oil, and salt.

  • Mix and pour into the air fryer. Cook for about twenty minutes at a maximum temperature of around 375°F.

  • Open the air fryer halfway through cooking to mix with the wooden spoon.

  • Finally, finely chop the garlic clove, mix again, and let it rest for about twenty minutes. Place the pepper and zucchini side dish on a serving plate and serve.

  • Preferably accompany the roasted peppers and zucchini in the air fryer with some good homemade bread.
