Authentic and Warming Farmer’s Vegetable Soup

The soup of farmer’s vegetables is made with the good vegetables from the garden. A recipe that helps fight the cold of the winter season.   • 2 Potatoes (medium)
  • 7 oz Celery (a piece from the stalk)
  • Onions (a large one)

Preparation

  • Clean the broccoli by removing any damaged parts. Cut the tops and use the stalks too. Remove only the hardest part. Wash the vegetables thoroughly.

  • Boil the cleaned broccoli, tops, and stalks in a pot with enough water, along with the peeled and diced potatoes, chopped celery, and bay leaves.

  • Boil for about fifteen minutes over moderate heat. Drain the cooking liquid, setting aside what is needed to thin the soup if it’s too thick. Blend the vegetables in the food processor.

  • Then blend the vegetables in the food processor. In a saucepan, heat a little oil with finely chopped onion until golden, then add the hot chili pepper, blended vegetables, and a few broccoli tops kept for decoration.

  • Reheat for a few more minutes and finally serve the steaming farmer’s vegetable soup in plates. Remember to remove the hot chili pepper except in the farmer’s plate who is used to it. 🙂
