Baked Chicken and Potatoes with Apulian Rosemary

Chicken and potatoes baked with Apulian rosemary has an irresistible, unmistakable aroma that can be sensed from afar, how delicious!!!
A recipe I often cook because it’s easy to make and pleases all family members. When I prepare it, my husband always tells me to add a few more potatoes. 🙂 It’s enjoyed so much that it’s never enough.
In Puglia, we also have rosemary that grows wild along the Adriatic coast.
It’s a widely used and sought-after spice.
We use it to flavor potatoes but also for white meats, roasts, and even on fish.

Baked Chicken and Potatoes with Rosemary

Ingredients

  • 25 oz Potatoes
  • 1.1 lbs Chicken (Cut into pieces)
  • 1 clove Garlic
  • to taste Rosemary
  • to taste Extra virgin olive oil
  • to taste Grana Padano DOP

Tools

  • Cake Pan
  • Oven

Preparation

  • Peel the potatoes, wash them, and cut them into large wedges. Place them in a baking dish and add the chicken pieces.

  • Add the halved garlic (to be removed after cooking), salt, preferably fresh rosemary, some grated Grana, and a drizzle of extra virgin olive oil on top.

  • Pour a glass of water on the edges of the baking dish so that the seasoning remains intact.

  • Bake at 536°F and cook for about one hour and fifteen minutes.

  • Open the oven occasionally during cooking to check if it dries out too much and add more water if necessary.

  • At the end of cooking, the potatoes and roasted chicken will have a golden and inviting appearance.
