Chicken rice has a delicate and light taste, so it cooks quickly using a pressure cooker.
This special rice used to be the classic lunch that characterized Sunday when I was young and staying with dear friends in French-speaking Switzerland.
While in Italy, it’s a ritual to eat pasta with sauce on Sundays, which is good but heavy (napping after lunch becomes a necessity), I didn’t miss it. Sometimes changing habits doesn’t hurt. Compared to pasta, rice is easily digestible, allowing me to feel agile enough to enjoy the beautiful Sunday afternoon outings, such as walks by the lake or in forests and other beautiful places.

First, prepare a good vegetable broth with water and vegetables (celery, carrot, onion, and potato) placed to cook in a small pot for thirty minutes.
Then put three tablespoons of oil in the pressure cooker with a pat of butter and the finely chopped onion.
Brown and then add the chicken cut into small cubes.
Leave for a few minutes and add rice and white wine. Let it evaporate by stirring, and finally pour the half-liter of already prepared vegetable broth.
Close the pot and calculate, however, eight minutes of cooking from when it reaches maximum steam and the flame is lowered (follow the cooking instructions for the pot you use).
Chicken rice is a light and tasty recipe also suitable for children and the elderly.
