Chocolate Chestnut Truffles

Chocolate chestnut truffles are high-end pastry sweets. Similar to chocolates that can be made at home and then shared with friends who come over for coffee, and also at the end of a meal.
They are exquisite and refined with chestnuts that in autumn delight and gratify us.
In my childhood memories, I recall my family gathered around the table with hot chestnuts that were mostly eaten boiled or roasted.
There was a wonderful emotion in sharing them.
Can you imagine if we had had chestnut truffles back then?
I would have been overjoyed, but I discovered truffles later and since then I prepare them at least once a year for myself and my loved ones.
Finally, it’s autumn, the perfect season to enjoy them.

Ingredients

  • 10.5 oz Dry cookies
  • 10.5 oz Chestnuts (Weighed after peeling)
  • 1.25 cups Fresh liquid cream (For desserts)
  • 3.5 oz Sugar
  • 1.75 oz Unsweetened cocoa powder
  • 1 coffee cup Liquor (Preferably bitter)
  • 10.5 oz Dark chocolate

Useful Tools

  • Electric whisk
  • Food processor
  • Parchment paper
  • Potato masher

Preparation

  • Boil the peeled chestnuts for twenty minutes in boiling water. Remove the skin and mash them with a potato masher.

  • Whip the cream with a whisk until it becomes firm enough to stick to the bowl.

  • Crumble the cookies and place them in a large bowl. Combine with the chestnuts and other ingredients.
    Make a dough and form small truffles.

  • Dip them in melted dark chocolate using two forks.

  • Place the chocolate chestnut truffles on a sheet of parchment paper on a tray to dry and then place them on a tray in paper cups.

  • Store the ready-to-serve chocolates in the fridge to take them out whenever you need a touch of sweetness.

Making chocolate chestnut truffles requires effort and time (at least two hours) for preparation, especially for peeling the chestnuts.
The effort will certainly be compensated by the pleasure at the end.
