The clever mimosa cake with canned pineapple is easy to make for International Women’s Day (March 8) and for any occasion. It’s also great for birthdays and is a practical solution. It’s a double cake for many guests, which is why it’s clever.

It’s an idea copied from a friend of mine that I find useful. The sponge cake is cut in half and the layers are filled separately.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/4 cups granulated sugar
  • 6 eggs
  • 1 lemon (Use the grated zest)
  • 1 packet baking powder for cakes
  • 1 packet
  • 1 packet vanillin
  • 1 package whipping cream (for desserts (approx. 200 ml / about 3/4–1 cup))
  • 1 can canned pineapple (about 565 grams (≈ 20 oz / 1 lb 4 oz))
  • to taste limoncello

Steps

Using electric beaters in a large bowl, beat the eggs with the sugar until they become frothy.

  • Gradually incorporate the sifted flour mixed with the baking powder and vanillin while continuing to beat with the electric beaters. Add the grated lemon zest.

  • Butter and flour a 32 x 22 cm pan (about 12.6 x 8.7 in) and pour in the batter. Bake in a preheated oven at 180°C (about 356°F) for approximately thirty-five minutes.

  • Let the sponge cake cool well and cut it in half with a large knife.

  • Whip the cream. Cut the pineapple slices into small pieces.

  • Soak the two cake layers with the pineapple syrup and a few tablespoons of limoncello. Arrange the fruit pieces on top and then generously fill with whipped cream.

  • Finally, decorate with some cake crumbs obtained when cutting the sponge.

  • Refrigerate for at least one hour, preferably two, before serving. The cake is enough for about fifteen people.
