Preparation
In a bowl, add all the ingredients: all-purpose flour, almond flour, sugar, softened butter, egg, and mix well with your hands until you get a homogeneous mixture.
Then form a ball and wrap it in cling film.
Place it in the refrigerator to cool for an hour.
Finally, take the cookie dough out of the fridge and roll it out on a work surface with a rolling pin. Then place the previously drawn and cut paper number templates on top. Cut around with a knife.
In this case, for my sixtieth birthday, I prepared four large cookie dough numbers as in the image. Bake for about thirteen minutes in a static oven set at 356°F.
While the numbers are baking, prepare the delicious cream.
Whip the cream with the electric whisk until it becomes thick. If it doesn’t spill when tilting the bowl, it’s ready. Add the soft cheese and vanillin and mix gently.
Fill the piping bag halfway with cream for better handling. Garnish the bases with many close meringues. Place the corresponding numbers on top, matching them, and repeat the same operation.
Arrange the washed fruit pieces and cheerful colored sprinkles, but if you prefer chocolate chips, macarons, or other fruits, you can certainly decorate creatively. In the end, the result will still be excellent.
