Eggplants with Chocolate and Crumbled Bread

The eggplants with chocolate and crumbled bread baked in the oven are my version. Inspired by the famous Amalfi sweet recipe rich in ingredients such as chocolate, amaretti, nuts, etc., I thought of stuffing eggplants as the Puglian grandmothers did, using crumbled bread.

My light version of the recipe is equally tasty and unique.

Ingredients

  • 2 eggplants (small)
  • 3.5 oz dark chocolate
  • 1.75 oz bread
  • 1 glass water (or milk)
  • to taste colored sprinkles

Steps

Wash and dry the eggplants. Cut in half and place them on a baking tray lined with parchment paper.

  • Put back in the oven and continue to cook for another fifteen minutes.

  • When the eggplants are well cooked, you can add the colored sugar sprinkles as desired.

  • Let the eggplants with chocolate and bread cool and rest for at least two hours, then you can enjoy this unusual sweet that even I was not familiar with but recommend trying.

Therefore, the eggplants with chocolate and bread should be enjoyed preferably cold and will be definitely better. If you prefer, you can drizzle or dip them in melted dark chocolate. I preferred the light version.
