Ingredients
- 1/3 cup all-purpose flour

- 2 tbsp milk
- 1 tbsp sugar
- 1 packet vanillin
- as needed maple syrup
- 2 tbsp butter (For greasing the pan)

- Whipped cream (sweet)

Preparation
Separate the yolks from the egg whites. Whip the egg whites to stiff peaks and refrigerate.
Then pour the eggs and milk into the bowl and mix.
Pour the sifted flour with baking powder and vanillin into the bowl and work with the manual whisk.
Then add the whipped egg whites and mix well with gentle movements not from bottom to top to incorporate but without deflating.
Heat a knob of butter in a large pan and cook two pancakes at a time. A heaping spoonful of batter for one pancake.
Cook on low heat with the lid on the pan for about two minutes.
Remove the lid and add another spoon of batter on top and cover with the lid.
Flip the pancakes to the other side to continue cooking when they set and then they will be golden on both sides. In total about ten minutes of cooking.
Continue until the batter is finished and finally serve the fluffy Japanese sweet pancakes with maple syrup poured on top and a dollop of sweet fresh whipped cream for the more indulgent.
