Fresh Summer Salad with Cucumbers and Stracciatella

The fresh summer salad with cucumbers and stracciatella is light and appetizing. Dressed with lemon juice and a drizzle of extra virgin olive oil. When in summer, on the hottest days, you completely lose your appetite, perhaps something like this could encourage you to eat something.
What’s better to hydrate and regain energy than a green salad with the addition of cucumbers that contain a lot of water and delicious cheese, which here in Puglia is unbeatable just like ricotta, mozzarella, etc…

Fresh Summer Salad with Cucumbers

Ingredients

  • 1 lettuce
  • 1 stracciatella ((1 package))
  • 2 cucumbers
  • to taste lemon juice
  • to taste extra virgin olive oil

Preparation

  • Wash the lettuce leaves and put them in a colander to drain well.

  • Peel the cucumber and slice it into thin rounds.

  • Then combine the green leaf lettuce, cucumber, and pitted green olives in a salad bowl.

  • Finally, season with a little salt, a drizzle of extra virgin olive oil, and a tablespoon of freshly squeezed lemon juice.

     

  • Serve the delicious mixed fresh summer salad on plates and place the fresh pulled stracciatella cheese in the center.

Tips:

It’s a good solution especially in summer when appetite decreases due to the scorching heat, and you feel the need for something fresh and appetizing.

It’s inviting and yet easy to prepare, complete with the more nutritious cheese and very hydrating cucumber.

I also recommend accompanying it with some good homemade bread because I’m sure it will become irresistible to dip into the delicious fresh cheese. As my mother always said when I had no appetite as a child, this famous phrase that I never forget: “appetite comes with eating.” with this recipe, I definitely agree with her even more. 🙂
