Gnocchi with tomato and grana shavings is a first course that can be prepared quickly. With fresh tomato sauce, light and fragrant, it’s especially suitable for summer. However, it is made even more delicious by the grana cheese shavings. This fresh tomato sauce, which we Apulians also call ‘Fake Sauce,’ is often cooked with spaghetti or penne, especially in summer. Why it’s called fake, don’t ask me 🙂 I don’t know, maybe because it requires less cooking time or because it lacks meat and is not the classic ragù. The fact remains that gnocchi with fresh tomato and grana shavings are more digestible than regular pasta and are enjoyed willingly.
